July Means Local Corn Salad

We like to go to The Maple Bank food stand in Roxbury, Connecticut for vegetables in summer. Starting about now you can get corn for one of our favorite dishes, corn salad. Here is Annie shucking the ears. After we’ve boiled the ears and they’ve cooled, Liza cuts off the kernels. This time we used the recipe from Barefoot Contessa (https://barefootcontessa.com/recipes/fresh-corn-salad) and added some sweet local cherry tomatoes.

One great thing about Maple Bank is that you can feed the sheep. We’re pretty good at the call right now and they come running when they hear it and see us with the old vegetables they’ll eat right out of our hands.
